    James and Tracey have purposefully created a multi-layered effect. Their kitchen tells stories rather than following trends. With its simmering broth rich in marrow and aromatics that evoke both nostalgia and excitement, each steaming bowl of pho is a testament to careful preparation.     A significant change in their direction can be seen in their recent approval to serve alcohol from 11 a.m. to midnight. It makes room for evening pairings, such as spicy bò né with a chilled bottle of white that the visitor brought in or late summer evenings spent eating plates inspired by street food while candlelight softly dims. This is especially crucial for Windsor. Nón is now in a prime position to provide the town’s long-needed venues for informal nighttime dining that feels sophisticated without being formal.
